Wynand Fockink is in a small alley off Dam Square and has been producing jenever and Dutch liqueurs since 1679. The tasting room is a small wood-panelled space with around 20 standing spaces and the distillery itself is in the building behind.
The signature ritual is the kopstootje — literally 'small head butt'. You order a jenever, the bartender fills the tulip glass to the meniscus, and you lean over and sip the first taste without using your hands. Then you chase with a beer.
