Budapest sits at the centre of one of Europe's most underrated wine regions, yet most tourists leave having drunk nothing but Bull's Blood from a supermarket shelf. Doblo exists to correct that mistake. Tucked into the lower end of Dob utca in the Jewish Quarter, it occupies the ground floor of a 19th-century apartment building, its vaulted brick ceiling rising over a bar lined with 180 Hungarian wine labels and a scattering of candle-lit wooden tables.

The focus is entirely on domestic production. The list spans the country's 22 wine regions, from the volcanic basalt soils of Badacsony on Lake Balaton to the limestone cellars of Eger and the legendary sweet wines of Tokaj. The staff know their subject intimately and will spend genuine time steering you toward bottles that match what you are looking for, whether that means a lean, mineral Olaszrizling for an aperitif or something richer from the Villány region for a late-night conversation.

Food is cheese-and-charcuterie focused, sourced from Hungarian artisan producers and designed to accompany a second bottle rather than replace dinner. The atmosphere is genuinely romantic without being self-conscious about it. This is one of the best date night bars in Budapest, and one of the best wine bars anywhere in Central Europe.

Ask for a dry Furmint from a producer like Oremus or Disznókö. Complex mineral white wine at a fraction of its value elsewhere in Europe.

The premium version of Bull's Blood, nothing like the supermarket bottles. Deep, structured red from the Eger region with serious cellaring potential.

The selection changes with season but reliably includes a hard sheep's cheese from Transylvania and a sharper, washed-rind variety that pairs with the reds.

Order a glass of the sweet Aszú to finish. Complex, ancient, and unlike anything produced anywhere else on earth.

Midweek evenings, 7pm to 10pm. Quieter than weekends, easier to hold a table, and the staff have more time to guide your choices through the list.
