Nauticus holds the corner at 142 Duke Street in Leith, in the room that used to be the Parlour. Kyle Jamieson opened it with Iain McPherson and Sam Chapman, the team behind Panda and Sons and Hoot the Redeemer, and the pedigree shows.

The room runs racing green walls, parquet, antique chandeliers and a fireplace under original cornicing, with shells decking the bar as a nod to Leith's port history. Difford's Guide files it among Edinburgh's essential cocktail rooms.

The list champions Scottish producers first, with drinks like the Sergeant Pepper built on Seven Crofts gin and a local gose. The World's 50 Best Discovery list includes it, and the whisky shelf leans indie bottlings over the obvious names.
