Pergamino began as a roaster and quickly became one of the most talked-about addresses in Medellín. The Laureles location, tucked away from the louder corners of the city's bar scene, has a rooftop that belongs on any serious list of places to drink in South America. The city spreads out below you in a long green valley framed by the Andes, and as the sun drops behind the western ridge, that view is exceptional.
During the day, Pergamino operates as a specialty coffee bar with some of the best Colombian single-origin espresso you will find anywhere on the continent. The same precision carries into the evening programme. The cocktail list is short, only eight drinks, but each one is calibrated with the kind of care you would expect from a team that has spent years perfecting extraction times. Colombian rum, local honey, and seasonal fruit take the lead. The wine list is spare but well chosen, with a lean toward natural wine imported from Argentina and Spain.
The crowd during the day skews toward local creative professionals and international visitors who have graduated beyond the Parque Lleras tourist circuit. By 6pm, the atmosphere shifts gently toward the evening without ever becoming loud.
