The cocktail program rebuilds classics with mezcal — Mezcal Old Fashioned, Mezcal Negroni, Mezcal Daiquiri. Each drink uses a different mezcal matched to the cocktail style. Bartenders are mezcaleros and will walk through the agaves before pouring.
