· Wine list Plah is Terje Ommundsen's Frogner Thai-Norwegian restaurant whose bar seats and wine programme have become one of Oslo's most interesting drinking destinations. The cellar is built around natural-leaning French producers — heavy Loire and Auvergne presence, a serious Alsace section, and Champagne grower selections from Tarlant and Vouette et Sorbée — chosen specifically to work alongside the kitchen's spice profiles rather than the conventional Thai-wine pairings.

Sommelier Marit Smedslund runs the floor with the kind of seriousness that makes the bar-only experience genuinely worthwhile. Ranks fifth because the format is restaurant-led but the spice-pairing thesis is unique in the city and the cellar depth is real.
