Smuggler's Cove is not just the best bar in San Francisco. It is one of the great rum destinations on the planet. More than 500 rum expressions line the walls, the menu runs to 70 tiki cocktails, and the research behind it all is serious enough that bar professionals fly in from other countries specifically to study it. Martin Cate opened this place in 2009, and it has won every award worth winning since.

The room is all shipwreck salvage and nautical excess: rope, wood, fire features, and a ceiling covered in tropical foliage. It should feel theme-park ridiculous. Instead it feels like the most committed version of itself possible, which earns a different kind of respect. The service matches the ambition. Every member of staff can explain the provenance of any rum on the list.

Queues are common, especially Thursday through Saturday. Arrive when doors open at 5pm and you will almost certainly get a seat immediately. This is one of the hidden gem bars in San Francisco that the rest of the world has now found, but the experience remains exceptional. Weekday evenings from 5pm to 7pm are the sweet spot. The room fills quickly after 7pm any night of the week. Arrive early, order something communal, and settle in for the evening. The San Francisco cocktail bar scene has many excellent options, but none of them replace this one.
