ConserBar opened in August 2019 at Avenida Condell 1189, a restored house on the Barrio Italia grid (ChileGastronomia). The name fuses conserva and bar, and the menu commits to it: Chilean regional products, preserved and poured.
ChileGastronomia summed up the concept as touring Chile at your table. The Mestizo, borgoña and chupilca rebuilt as one glass, costs CLP 6,200 and makes the argument.
Chef and Hotel magazine framed the project as author cocktails built on tradition and memory. It reads as a date spot, and the tables are sized for two.
Most cocktails stay under CLP 8,000. There is no wrong order on a list this tight.
Tuesday through Thursday runs quiet from 6pm. Friday and Saturday fill by 9pm and hold until the 2am close.

Metro Santa Isabel on Line 5 is the usual approach, about ten minutes on foot through Barrio Italia. Doors open at 6pm sharp, and the first hour is the easiest seat of the week.
