Dante West Village

Dante's West Village outpost on Hudson Street trades the busy MacDougal flagship for a calmer, more intimate room better suited to a date. The Negroni and Garibaldi program carries across, poured with the same precision that earned Dante a place among the world's most awarded bars. The lighting is soft and the pace unhurried. Best early evening for aperitivo, before the after-dinner crowd arrives.

Temple Bar

Temple Bar on Lafayette Street in NoHo reopened in 2021 under the Attaboy partners, restoring a dark, glamorous lounge that first ran from 1989. The cocktails are exacting and the room is built for low conversation, with leather booths and dim light. A DJ adds atmosphere Thursday through Saturday. Best on a quieter weeknight, settled into a back booth before the music starts.

Apotheke

Apotheke hides on Doyers Street in Chinatown, an apothecary-themed bar where the menu is sorted into Stimulants, Painkillers and Aphrodisiacs. The drinks lean theatrical and herbaceous, mixed behind a marble counter in a former opium-den alley. It is a memorable, slightly dramatic choice. Best later in the evening, when the candlelit room and the crooked lane outside do their best work.

Bar Termini

Bar Termini is Tony Conigliaro's tiny Soho aperitivo bar on Old Compton Street, seating barely 20 around a marble counter. The bottled Negronis and house Marsalas are the order, served fast and faultless in a room that rewards sitting close. It is romance by way of restraint rather than spectacle. Best in the early evening, when the small room is calm enough to actually hear each other.

The Blind Pig

The Blind Pig sits above Jason Atherton's Social Eating House in Soho, entered under a vintage optician sign and through a blindfolded-hog door knocker. Dark tin ceilings, leather booths and an inventive, often playful cocktail list make it a date room with a sense of humor. Reservations help. Best for a second date that wants a hidden-door entrance and drinks worth talking about.

Aqua Kyoto Bar

Aqua Kyoto perches above Regent Street near Oxford Circus, a Japanese restaurant with a chic cocktail bar and a rooftop terrace over the West End. Kimono-silk booths and skyline views make it the dressy, occasion choice here. Pair the cocktails with a few plates from the sushi counter. Best at dusk on a clear evening, when the terrace opens and the rooftop catches the last light.

Satan's Whiskers

Satan's Whiskers in Bethnal Green is the bartenders' favorite, a stripped-back East London room with a daily-changing menu scrawled on a board and hip-hop on the speakers. The drinks are among the best in the city, served without ceremony. It is casual rather than plush, better for a relaxed date than a formal one. Best early, since it is small, walk-in only and fills fast.

Little Red Door in the Marais ranks among the World's 50 Best Bars, building its menus around sustainability and a rotating creative concept. Candelaria hides a celebrated cocktail bar behind a working taqueria in the Marais, reached through an unmarked door at the back. The agave-driven drinks are among the best in Paris, poured in a tiny, warm room that forces people close together. Order tacos at the front first.
