The Plotting Parlour

Tucked down Steine Street in Kemptown, The Plotting Parlour reads like a private box at the opera: red leather cinema seats, low light, a ceiling painted in Renaissance style. The cocktails are seasonal and serious, built on local produce, and the room seats few enough that conversation stays yours. Best for a first date that needs the drinks to do the talking. Open from 3pm midweek.

The Golden Pineapple of Ship Street

The Golden Pineapple hides on Ship Street in The Lanes, candlelit and built around agave: more than 100 mezcals and tequilas line the back bar. The kitchen, Papa Dumpling, folds gyozas to order. Order a smoky margarita and a plate to share. Best for a second or third date that wants a little theatre and a lot of flavour.

Plateau

Plateau on Bartholomews was the first natural wine bar outside London, and 15 years on it still pours more than 20 wines by the glass that change weekly. Stained glass and exposed brick set a low, intimate tone, and the small plates run on Sussex produce. Best for a date that wants to run long over bottles rather than rounds. Open daily from noon.

The Mesmerist

The Mesmerist spreads across three floors of Prince Albert Street, all Victorian steampunk: chandeliers, plush leather, vintage prints. There is a cocktail bar, live music and DJs most nights, and a rooftop garden with its own bar when the weather turns. Best for a date that starts quiet and ends dancing. Arrive early on a weekend; the rooms fill fast.

Bar Medusa has held its corner of Preston Street for more than thirty years, a small candlelit room with a stage and a basement speakeasy pouring tequila. The list runs to cocktails, exotic rums and beers from across the world. Best for a relaxed, quirky date away from The Lanes crowds. Open from 4pm midweek and noon at weekends, closed Mondays.

The Wine Cellar Brighton

The Wine Cellar sits on Marlborough Place in North Laine, a secluded room stocked with more than 70 wines from around the world. The team runs private tastings daily, paired with local cheese and charcuterie. Best for a date built on curiosity, where someone else guides the order. Open from 4pm on weekdays and noon at weekends.

Mrs Fitzherberts

Named for the secret wife of George IV, Mrs Fitzherberts crams curios into every corner of its New Road rooms, then opens onto a garden roof terrace. L'Atelier du Vin

Behind a secret door in North Laine, L'Atelier du Vin plays the 1920s straight: vintage French posters, Prohibition clippings, low light.
