Barfüßer brews its own beer in the cellar at Hallplatz, a copper-kettle Hausbrauerei five minutes from the Hauptbahnhof. The unfiltered Keller beer is the order, poured into half-liter mugs alongside Franconian pork and dumplings. It runs daily from 11am to 1am, so you can land anytime. Go for a long table downstairs near the tanks. A proper Franconian brewhouse that does one thing right.
