Hong Kong hides world-class bars up unmarked staircases across SoHo and Central, even as a brutal year thinned the scene. These six survived the cull and still rank with Asia's best. We checked each against Asia's 50 Best, recent press, and current hours, and cut four that have since closed.

Expect punk on the speakers, strong pours, and zero pretense. It runs from 3 PM to 1 AM. Come late, tip well, and let the bartenders pour you something off-book while the room sings along.
