Hiroyasu Kayama runs Benfiddich like an apothecary, eight seats on the ninth floor in Nishishinjuku, no menu, herbs and roots he grows on his family land in Chichibu. He grinds wormwood at the counter and builds a drink around the mood you describe. Come right at the 6pm open, before the room fills. For drinkers who want a bar that feels grown, not stocked.
