The four below are the ones we could confirm are open and pouring in 2026, from Hiroyasu Kayama's apothecary in Nishishinjuku to a six-seat counter above Shimbashi. We dropped six names from the older list that we could not verify as real, open Tokyo venues, one of which is actually in Kyoto.
Hiroyasu Kayama runs Benfiddich like an apothecary, eight seats on the ninth floor in Nishishinjuku, no menu, herbs and roots he grows on his family land in Chichibu. He grinds wormwood at the counter and builds a drink around the mood you describe. Come right at the 6pm open, before the room fills. For drinkers who want a bar that feels grown, not stocked. It ranked No.18 on the World's 50 Best Bars 2025.

The drinks follow a kaiseki structure, and a hidden sushi counter called Belle Sushi sits in the back. Order the corn-infused bloody mary and go after 8pm. For anyone who likes some theater with the craft. It landed at No.48 on the World's 50 Best Bars 2025.
