Butler sits on the fifth and sixth floors of a Mody Road tower in Tsim Sha Tsui, a tiny Tokyo-style den with more than 200 whiskies and white-jacketed bartenders. The sixth-floor whisky room is the seat to ask for. Order a Japanese pour or a fruit-forward cocktail built to order. Reserve, since it is small. The Canny Man fills a basement under the Wharney Hotel on Lockhart Road, Hong Kong's one true Scottish bar, with more than 180 single malts behind the counter.
