The Auld Alliance pours from more than 1,000 expressions across Scotland, Ireland, Japan and the US, its list running close to 70 pages. After years at CHIJMES and the Rendezvous Hotel, the bar is moving to Capitol Singapore for its next chapter. Tell the staff what you like and let them teach. Best on a quiet weeknight. Quaich Bar

Quaich Bar has carried Singapore's whisky flag for years, now spread across rooms at Waterfront Plaza, South Beach and InterContinental, with more than 500 boutique bottles between them. The team chases rare and distinctive launches, and in 2025 they joined seven bars on an SG60 single-cask collaboration. Go for a guided flight. The Wall
