Paloma Vermuteria holds a quiet corner at Guldbergsgade 51A in Norrebro, a few minutes from Skt. Hans Torv. The name borrows from the Mexican cocktail, but the model is Spanish, a vermuteria where the aperitif hour is the main event.
The vermouth list rotates seasonally through Spain, Italy and Portugal, with the house creations as the staples. Spotted by Locals singles out the indulgent original, the bittersweet coffee vermouth and the mild coconut vermouth, with the house pour at DKK 60.
Cocktails of Copenhagen credits Paloma with bringing the day bar to Denmark, and the 3pm opening backs that up. Local craft beer on tap, proper cocktails and homemade mulled wine in December round out the list.
The snacks stay Iberian and reasonable, hummus plates, walnut sausage, sardines with pico de gallo. Indoors you get a small room with domino games, outdoors a handful of pavement tables that go fast on sunny days.
Come at opening on a warm afternoon and treat vermouth hour seriously. For more of the city, see our Copenhagen wine bars guide, the best bars in Copenhagen, and our Copenhagen cocktail bars guide.
Sunny afternoons from the 3pm opening are the prime window, when the pavement tables catch the light and the vermouth makes sense. They go fast.
