Notably absent are a few names that appeared on older versions of this page and have since shut their doors.
We weight atmosphere first, then the drinks, then service, then the practical factors a date lives or dies on: noise level, seating you can actually talk across, and whether you can get in. If we had to send a couple to one bar in each of three cities, it would be Angel's Share in New York, Williams & Graham in Denver, and The Violet Hour in Chicago: three rooms built, from the door inward, to make two people forget the time.
