Canon

Canon claims the largest spirits collection in the western hemisphere, a vault of more than 4,000 bottles on Capitol Hill. The menu reads like a phone book, so tell the bartender what you like and let them steer. Drinks run 14 to 18 dollars. Walk-ins only, and the line forms before the doors open at 5. Worth the wait once.

Rob Roy

Rob Roy is the Belltown bar where Seattle's own bartenders drink on their nights off. Low light, vinyl on the turntable, classics done right around 13 dollars. No reservations, no fuss. Go on a weeknight before 9 and grab a stool where the regulars trade shop talk. The worst seat in the house still gets a proper pour.

Zig Zag Cafe

Zig Zag tucks into the Pike Place Market hillclimb, and the revived Last Word was reborn here in the early 2000s. The room is small and the drinks are honest, 13 to 15 dollars. Go at dusk for a window seat over the waterfront before the dinner rush. Order the Last Word, naturally. Cocktail history that still pours nightly.

Damn the Weather

Damn the Weather sits in a historic Pioneer Square storefront on First Avenue, all brick and big windows. The kitchen leans Southern, fried chicken and oysters, and the cocktails hold around 14 dollars. Go early evening for a window seat before the after-work crowd lands. Order the fried chicken with whatever the bar is shaking. A room locals defend.

Navy Strength

Navy Strength is the tiki bar from the Rumba team, in Belltown on Second Avenue. Tropical drinks come loud and rum-heavy, around 14 dollars, and the menu rotates by region. It opens at 4 and closes by midnight on weekends. Go Wednesday or Thursday before the seats fill. Order something flaming and split the nachos. Loud, fun, no pretense.

Tavern Law

Tavern Law is a Capitol Hill cocktail classic on 12th Avenue, open since 2010 and under new owners since 2025. Upstairs hides Needle and Thread, a reservation-only speakeasy you reach by an old phone. Drinks run 14 to 16 dollars. Take walk-in seats downstairs early, or book the room upstairs for a quieter night. Still one of the city's steadiest pours.

Barnacle

Barnacle is a skinny 20-seat wine and aperitivo bar on Ballard Avenue, next to Renee Erickson's Walrus and the Carpenter. The list runs European, the amari run deep, and the charcuterie is house-made. It opens at 3. Go midafternoon for a copper-counter seat before the dinner overflow. Order a Negroni and a board of cured meat. Tiny and sharp.

The Doctor's Office

The Doctor's Office seats a dozen on East Olive Way, run by a former Liberty owner and an actual working doctor. The focus is rare Japanese whisky and yakitori, with hot towels at the door. Drinks aren't cheap, but the hospitality earns it. Book through Tock, because walk-ins rarely fit. Go early in the week for the bartender's full attention. A jewel-box bar.
