Seattle has the deepest American whiskey list in the country (Canon), the city where Murray Stenson rediscovered the Last Word, and a bar scene that quietly competes with anywhere on the West Coast. The 10 below show why Seattle deserves a separate cocktail trip.

The 10 best cocktail bars in Seattle

Editor's №1

Canon

Canon holds one of the largest spirits collections in the world, north of 4,000 bottles, and Axios still called it the city's whiskey paradise in 2026. The Capitol Hill room is small and the wait is real, so come at 5 PM or plan to stand. Order off the captain's list, lean whiskey, and let the bartender steer the night.

Rob Roy

Rob Roy is the Belltown bartender's bar, a James Beard Outstanding Bar nominee in 2023 and the room industry folks drink in after their own shifts. Dark, low, and serious about technique without the attitude that usually comes with it. Order a classic built right, take a seat at the bar after 10 PM, and watch people who pour for a living order from people who pour for a living.

Zig Zag Cafe

Zig Zag Cafe near Pike Place is where Murray Stenson resurrected the Last Word, and the room has stayed a quiet national landmark since 1999. Tucked on the Pike Street Hillclimb, it rewards regulars who know the drinks are faultless and the bartenders never show off. Order the Last Word, go early evening, and take the seat at the bar.

Damn the Weather

Damn the Weather sits on First Avenue in Pioneer Square, a farm-to-glass bar and gastropub open since 2014. The cocktails are sharp and the kitchen actually cooks, which makes it the rare spot you settle into for the whole night. Order a seasonal drink and the burger, come before 8 PM on a weeknight, and you will get a seat.

Navy Strength

Navy Strength in Belltown is Anu Apte and Chris Elford's tropical room, all tiki theatrics and an ever-changing around-the-world menu since 2017. It is the playful counterweight to Rob Roy down the block. Order whatever flaming thing the current menu is built around, bring people, and go Wednesday through Sunday when the doors are open.

Tavern Law

Tavern Law on 12th has been a Capitol Hill fixture since 2009, and a third set of owners took it over in 2025 without breaking it. Upstairs, the Needle and Thread speakeasy runs reservation-only behind a vault door you reach by picking up an antique phone. Order off-menu and let the bartender build to taste. Book ahead for upstairs; the main bar takes walk-ins.

The Doctor's Office

The Doctor's Office on East Olive Way seats about a dozen and books through Tock, so this is not a walk-in. Keith Waldbauer, a former Liberty owner, treats each round like chemistry, with rare Japanese whisky and yakitori on the side. Reserve, arrive on time, and let the bar pour you something you cannot get anywhere else in the city.

Liberty

Liberty on Capitol Hill pulls off the cocktails-and-sushi combination that should not work and does, which is why locals rank it among the highest-rated bars in the city. The drinks are serious and the room stays unpretentious. Order a whiskey-forward classic and a roll, come on the early side, and grab a window seat before the after-work crowd lands.
