Tap rotation, staff knowledge, glassware (yes, really — a bar that pours every beer into the same pint glass is rarely a serious craft venue), and the willingness of the bartender to pour a small taste before you commit. We mark down bars that lean on the word "craft" for marketing while pouring the same six beers year-round.
